From Apple to Authentic Ferment: What is Liquid Orcharding?
The foundation of our cider is not a laboratory, but a Czech orchard. The entire process begins with selecting apples that have the right balance of sugars, acids, and tannins. We grind and press these apples to obtain pure must, which is the cornerstone of the future drink.
Unlike industrial production, we do not dilute or sweeten the must. We allow it to slowly ferment at low temperatures. It is this patience that allows the cider to develop its complex character and delicate bubbles, which are not the result of artificial carbonation, but of the natural life within the tank.
Prager's vs. Industrial Standard: A Difference You'll Taste
Why does our cider taste "more appley" and less sweet than those commonly available? The answer lies in our resistance to chemicals:
- No Concentrates: We do not use apple concentrate that would then be diluted with water. We work with pure juice.
- No Added Sugar: The sweetness in our cider comes exclusively from apples. If the cider is dry, it's because the yeast consumed all the sugar to create alcohol and a complex flavor.
- Naturally Gluten-Free: Cider is a great alternative to beer because it doesn't contain gluten, but offers a similarly refreshing crispness.
How to Best Enjoy Cider?
Cider is not just a drink for a campfire. It's a sophisticated beverage that deserves proper handling:
1. Temperature is Key
Serve cider chilled to 8–12 °C. Too low a temperature "locks in" aromatic compounds, while too high can make the alcohol stand out at the expense of apple notes.
